Micro arugula is the seedling stage of salad rocket (Eruca vesicaria), harvested at roughly one to three weeks old when the plant has unfurled its first true leaves. Tiny, tender and far more intensely peppery than the mature green, it is used almost entirely raw — as a sharp, decorative garnish on plated dishes, scattered over flatbreads and carpaccio, or folded into delicate salads where a little goes a long way.
These cues are Arugula's, and hold across its varieties; where this one differs, its own page says so.
