Arrack

Arrack is a family of traditional Asian spirits with two great and quite distinct traditions: Sri Lankan coconut arrack, distilled from the fermented sap of coconut flowers, and Batavia arrack, distilled in Java from sugarcane molasses fermented with red rice. Smooth, faintly funky and lightly floral in its coconut form, dry, pungent and rum-like in its Batavian form, arrack is one of Asia's oldest distillates and was the backbone of the great punches of the eighteenth century. It should not be confused with the anise-flavoured arak of the Middle East, which is a wholly different drink.

Coconut arrack is smooth and lightly floral, leading with soft coconut, fresh cane and ripe banana over a gentle funk, with a whisper of nuttiness and vanilla from time in halmilla and teak vats; Batavia arrack is drier and more assertive, all fermented cane, dried fruit, clove-like spice and a smoky, rice-driven tang closer to a high-ester rum. The texture is warming and spirituous at around 33 to 50 percent, and the finish runs from clean and gently sweet in coconut arrack to long, dry and pungent in the Batavian style.
