The ark shell is a large, ribbed marine bivalve (Anadara broughtonii, often listed as Scapharca broughtonii) prized in Japan as akagai — the "red clam" of the sushi counter, valued for its crisp, sweet, faintly mineral flesh and striking deep-red colour.
