The Cortland is an early American McIntosh-type apple — a large, slightly flattened fruit with a dark, purplish-red blush over a green-yellow ground and pure white, tender flesh. Sweet with a gentle tartness and a faint vinous, McIntosh-like perfume, it is best known for flesh that is unusually slow to brown after cutting, which makes it a favourite for salads, fruit plates and garnishes.
