The Aperol Spritz is the best-known of the Italian spritzes — a long, fizzy, bittersweet aperitivo of Aperol, Prosecco and a splash of soda water poured over ice in a big wine glass and garnished with an orange slice. It is light, low in alcohol and brilliant fluorescent orange, sweet-and-bitter with a clean orange-peel edge, made to be sipped slowly before dinner with a few snacks. A regional Veneto drink for most of the twentieth century, it became a global phenomenon from the 2010s and is now one of the best-selling cocktails in the world, the drink most people picture when they hear the word "spritz."
