Liqueur
Anisette
Anisette is a clear, intensely sweet, low-strength liqueur flavoured with aniseed — the seed of anise (Pimpinella anisum) — whose licorice-like top note comes from the aroma compound anethole. Milder and far sweeter than its stronger anise cousins pastis and ouzo, it is best known through French and Spanish brands such as Marie Brizard.

Fennel
Clear and cloyingly sweet, anisette leads with a pronounced licorice-and-aniseed aroma — the anethole note shared with star anise and fennel — over a warm, faintly spicy herbal base and a whisper of caramel sweetness. The texture is viscous and syrupy, the alcohol gentle for a liqueur at around a quarter ABV, and the finish lingers sweet and licorice-warm. Cut with water or poured over ice it louches to a milky white, softening into a cooling, perfumed aperitif far milder and sweeter than pastis or ouzo.
