Anise myrtle (Syzygium anisatum) is the aromatic leaf of a rare Australian rainforest tree of the myrtle family that smells and tastes powerfully of aniseed and liquorice, with a sweet, cooling, faintly minty edge. A "bush tucker" native spice, the leaf is used fresh, dried or ground to flavour teas, baking, syrups, desserts, dairy, seafood and dressings — wherever a clean anise note is wanted without the seed of true aniseed or star anise.
