Anise hyssop (Agastache foeniculum) is a North American prairie mint whose soft, anise-scented leaves and dense violet-blue flower spikes give off a sweet licorice-and-mint fragrance when bruised. The leaves and edible flowers are used fresh in teas, salads, fruit dishes and baking, and the plant is prized as one of the great bee and butterfly herbs of the temperate garden.
