Amchur (also amchoor) is a pale-tan, fruity-sour powder ground from sun-dried unripe green mangoes, used across North India to lend a sharp, tangy brightness — and a gentle tenderising bite — to chaat, curries, marinades and dals without adding any liquid. A pinch delivers the lift of a squeeze of lime in dry, concentrated form.
