Amazake (甘酒, "sweet sake") is a thick, milky-white, naturally sweet Japanese drink made by fermenting cooked rice with kōji — rice inoculated with the mould Aspergillus oryzae. Despite the "sake" in its name, the kōji-based version contains little or no alcohol, and it is enjoyed warm in winter and chilled in summer as a drink, sweetener and base for desserts.
