Almond oil is the pale, golden fat pressed from the kernels of the sweet almond, Prunus dulcis. Light-bodied and gently nutty with a faint marzipan sweetness, sweet almond oil is used as a finishing and salad oil and in baking, while bitter almond oil — a distinct, intensely aromatic product — is treated as a flavouring essence, not a cooking fat.
