Almond butter is a smooth, mild, faintly sweet spread made by grinding almonds — usually roasted — into a paste. It is the almond counterpart to peanut butter: a creamy, oil-rich nut butter eaten on toast, swirled into oatmeal and smoothies, or baked into cookies and energy bars. Plain versions are nothing but ground almonds, so the spread carries the nut's own gentle, marzipan-edged nuttiness. Compared with peanut butter it runs higher in monounsaturated fat, vitamin E and calcium, and lower in saturated fat, which is why it is often marketed as the more nutrient-dense choice.
