Agave nectar, also sold as agave syrup, is a pale-amber liquid sweetener drawn from the same blue-agave succulents used to make tequila. Thinner and more pourable than honey, with a clean, mild, almost neutral sweetness, it is markedly sweeter than table sugar and dissolves instantly in cold drinks — qualities that, together with its plant origin, made it a popular vegan stand-in for honey.
