Affogato

An affogato — Italian for "drowned" — is a scoop of cold vanilla gelato or ice cream "drowned" under a hot shot of freshly pulled espresso. Served in a small glass or cup and eaten with a spoon, it sits on the line between a drink and a dessert: the espresso melts the gelato into a warm-and-cold, bitter-and-sweet cream as you go, the roasted coffee cutting the vanilla sweetness while the gelato tames the coffee's bite. It is the canonical Italian caffè dessert — quick to assemble, requiring only good espresso and good gelato, and served across Italy as an after-dinner sweet.

An affogato reads first as hot roasted espresso poured into cold sweet cream: bitter, caramel-roasted coffee meets vanilla, buttery, milky gelato, the two folding into a warm-and-cold, bittersweet whole. The gelato's sugar and fat tame the coffee's bite while the espresso cuts the dairy sweetness, giving a rich, spoonable dessert that starts as two temperatures and finishes as a thick, sweet coffee-cream in the bottom of the glass. The vanilla and the roasted-caramel coffee share a warm register that makes the pairing read as one cohesive flavour.
