Cocktail
Adonis
The Adonis is a low-strength, wine-based aperitif cocktail from 1880s New York — sherry and sweet red vermouth stirred with a couple of dashes of orange bitters and served up. Delicate, nutty and off-dry, it is one of the earliest fortified-wine cocktails and the sweet-vermouth sibling of the drier Bamboo, made to sip gently before a meal.

Herbal
Pale amber and softly aromatic, the Adonis smells of nutty almond-and-flor sherry laced with fragrant orange-peel bitters over the herbal, faintly bitter depth of sweet vermouth. On the palate it is off-dry and savoury — a rounding caramel sweetness from the vermouth set against the dry, saline, slightly oxidative sherry — with a whisper of citrus spice, a gentle herbal lift and a clean, softly nutty finish at only around 16 percent alcohol, which makes it one of the lightest and most sippable of the classic aperitif cocktails.
