Activated charcoal

activated carbon (vegetable carbon, E153) · Modernist additive

Activated charcoal is an ultra-fine, jet-black carbon powder used in modernist and trend kitchens purely for colour — it turns bread, ice cream, pasta, buns and cocktails an inky, matte black without adding flavour. It is the same porous carbon used to filter water and treat poisonings, milled to a fine, tasteless powder.
